Chicken pot pie :)
One package of chicken thighs , skin and boil in three cups of water set aside to debone and save broth.
2 lbs peeled cut up carrots boil for five minutes approx then  add 5 peeled cubed potatoes to boiling carrots add also 1/4 cup chopped up celery . Boil till veggies tender . I put a cup of frozen peas in a colander and pour the boiling water/vegetables over them . set aside
take one dbl pie crust put in the bottom of  a deep dish pie pan . Save the other one for the top,  add de boned chicken and vegetables . In a large skillet melt 2/3 cup of butter saute 1 small chopped onion in this add 2 tsps of poultry seasoning , 1 tsp salt , 1-2 tsp of pepper and some celery salt . when onions are soft add 2/3 cup of flour brown slightltly like you would if making gravy , add 1/3 cup of milk and 2 cups of saved chicken broth . cook till thickend / Pour this over the chicken vegetable mix which should be piled pretty high in pie pan . Cover with top pie crust , crimp edges put abot 5 knife cuts in crust . bake in preheated oven at 425 degrees for thirty minutes . Let stand for ten before serving .
This is one of my families favorites . It is yummy but it is beautiful too. I took pictures of it last time I made it . (yes I am strange ) I will try to scan them onto the computer and post them.

CHICKEN WILD RICE SALAD   

2/3 c. mayonnaise
1/3 c. milk
2 tbsp. lemon juice
1/4 tsp. dried tarragon
3 c. cooked, cubed chicken
1 c. green grapes
3 c. cooked wild rice
1/3 c. finely sliced green onion
1 (8 oz.) can sliced water chestnuts
1/2 tsp. salt
1/8 tsp. pepper
1 c. cashews

Blend mayonnaise, milk, lemon juice, and tarragon. Set aside. Combine chicken, wild rice, onions, water chestnuts, salt and pepper. Stir in mayonnaise. Refrigerate 2-3 hours.
Just before serving, fold in grapes and cashews.

Spicy Thai one pot

1 lb chicken

2 green peppers

Chop green peppers and chicken into small pieces and brown- drain liquid

Add 2 cups water

2 tbsp soy sauce (ok I lost the actual recipe years ago- I just sprinkle some in until the water turns a brownish color)

¼ teaspoon garlic chili paste

Teaspoon Better Than Bouillon- or you can just substitute chicken broth for the water- if you have some hanging around

Bring to a boil

Add 1 cup white rice- cover and simmer for 20 min

Remove from heat

Sprinkle some celery flakes and chopped green onions on top

 

 

I also made some stir fry the other day- sautéed green peppers, red onions, mushrooms, squash and zuichini in olive oil- threw in some left over chicken and some soy sauce- put it over some rice- turned out really well

 

I also have a really good chicken and dumplings recipe at home- but I’ll actually go look at the recipe before I post it ;)

Chicken Spagetti
 
I use bonless skinless chicken breasts but you can use any part.
 
4 servings
4  bonless skinless chicken breasts boiled, drained, saving broth
 
about (you can adjust to your taste)
1 C chopped onions
1 C chopped celery
1 C chopped green onions
1 T chopped garlic.
 
Enough oil in pan to sautee the above veggies till clear.
 
Using broth from chicken to cook the pasta - cook enough for 4 people
 
when veggies are clear and soft add 1 can cream soup, 1/2 can roitell tomatoes and about 1 cup fresh sliced mushrooms and about 1 C velveta cheese - heat through - stir in chicken.  Add Salt and pepper to taste
 
Pour over drained pasta - stir it up and serve
 
If you like less veggies - so be it
if you like more or less cheese - adjust to your taste
 
I am a dump cook and this is  fairly foolproof
I always told my sons "I wasn't a hippie in the 60's so I will be one in my 60's". I am getting there.
