How can I preserve radishes?  I do have a food dehydrator, but not sure if I should freeze them or what?  Any help would be greatly appreciated.  Gail

I pickle them.  I don't think they would do very well in a dehydrator.  You might want to dehydrate a few as an experiment.

Radishes are one of my favs--the hotter the better! They can be shredded and frozen in small batches for soups etc. but obviously lose much of their intensity. I agree dehydrating may work better.

Pickling is probably the most common way of preserving radishes. To keep that fresh thing going, you can plant radishes every 2 weeks, just a little short row, instead of planting a whole patch at once. Leave a few for the seed pods, they are likewise good pickled when green. Let a few mature for seeds to replant.

I agree, we always ate them as they grew, never did preserve any. Always kept replanting them, they,re fast growers.

Willowbean--here is one to get you started. Enjoy!Smile

Chili Tomato Radish Relish
1 1/2 cups tomato puree or crushed whole tomatoes
1 cup diced onions
2 garlic cloves, minced
1 T. minced fresh basil or 1 t. dried
1 T. fresh crumbled oregano or 1 t. dried
2 t. ground cumin
1 t. chilli powder
2 t. lemon juice
2 T. sesame oil
1/4 cup vinegar
2 cups sliced radishes
Gently simmer all except radishes for 20 minutes. Pour the hot sauce over the sliced radishes, chill.  Yields 6 servings
